Curry

A good curry is not difficult. After learning to make my own curry by hand, curry powder is out the window. Anyway, I've never been good with making curries using commercially packed powders.

Give me ginger, give me chilli
All the heat come back to me
Pound the onions and the garlic
Mind you don't put in the leek

Turmeric gives the bright yellow hue
Milk from a cow if you mind your heart
Fry it all till fragrance flies
But mind the heat or milk fats part


That's why I make my own curries by hand. And that is a recipe. Old wives tales combined with common sense. And seriously, if your mum ever told you to stay by the curry and stir, for goodness sakes, do it!

High heat and a lax attitude will kill a curry faster than anything else.
